Aloo Paratha Recipe

Soft whole-wheat flatbread stuffed with spiced potato and cooked crisp on the tawa — a Punjabi breakfast classic.

Aloo paratha is the breakfast that Punjab is famous for — a soft whole-wheat flatbread stuffed with spiced mashed potato, cooked on a hot tawa until it is golden and blistered, and served with a dollop of butter and a spoon of pickle. It is filling, comforting weekend food, the kind that gets the whole family to the table.

The two things that make or break it are a soft, rested dough and a dry, well-seasoned filling. Once you have the knack of sealing and rolling, you will turn them out one after another.

Ingredients

For the dough:

  • 2 cups whole-wheat flour (atta)
  • Water, as needed to knead
  • 1/2 tsp salt
  • 1 tsp oil

For the filling:

  • 3 medium potatoes, boiled and cooled
  • 1 green chilli, finely chopped
  • 1 inch ginger, grated
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala
  • 1/2 tsp carom seeds (ajwain)
  • 1/2 tsp amchur (dry mango powder)
  • Fresh coriander, chopped
  • Salt to taste
  • Ghee, oil or butter for cooking

How to make aloo paratha

  1. Knead the dough. Mix the flour and salt, add the oil, and knead with water a little at a time into a soft, smooth dough. Cover it and let it rest for at least fifteen minutes while you make the filling.
  2. Make the filling. Grate or mash the cooled potatoes so there are no lumps. Mix in the green chilli, ginger, chilli powder, garam masala, ajwain, amchur, coriander and salt. Taste and adjust — the filling should be well seasoned. Keep it dry.
  3. Shape and stuff. Divide the dough and filling into equal balls. Roll one dough ball into a small disc, place a ball of filling in the centre, and gather the edges up over it to seal completely into a stuffed ball. Press it flat gently.
  4. Roll it out. Dust with dry flour and roll the stuffed ball out gently and evenly into a round, working from the centre so the filling stays put. Even pressure is the trick — press too hard on one spot and it will tear.
  5. Cook on the tawa. Heat a tawa on medium-high. Lay the paratha on and cook until small bubbles appear, then flip. Brush the top with ghee or oil, flip again, and press the edges down with a spatula so it cooks through and browns in golden patches on both sides.
  6. Serve hot. Take it off the tawa, top with a little butter if you like, and serve straight away. Repeat with the rest.

Tips and variations

If a paratha tears while rolling, dab a little dry flour over the tear and keep going — it will seal on the tawa. Rolling on a lightly floured surface and dusting as needed stops sticking. Work at medium-high heat: too low and the paratha dries out, too high and it browns before the inside cooks.

The filling takes well to variation — grated paneer, a little finely chopped onion, or a pinch of kasuri methi all change the character. Some cooks add a swirl of grated cheese for children. Frequently asked questions

How do I stop the stuffing from coming out?

Keep the potato filling dry and free of large lumps, seal the dough edges firmly over the ball, and roll with even, gentle pressure from the centre outward. If it tears a little, patch it with a pinch of dry flour and carry on.

Should the potatoes be warm or cold when I mash them?

Let boiled potatoes cool fully, then grate or mash them so there are no lumps. Warm potato releases moisture and makes the filling sticky and hard to seal. Cold, dry mash rolls out far more easily.

What flour is used for aloo paratha?

Whole-wheat flour (atta) is standard and gives the soft, pliable dough parathas need. Knead it with water until smooth and slightly soft, then let it rest for fifteen to twenty minutes so it rolls out easily.

Ghee, oil or butter on the tawa?

All three are used. Ghee gives the most traditional flavour and a lovely aroma, oil is the everyday choice, and a knob of white butter on top is the classic Punjabi finish. Use whichever you like — the method is the same.

Can I prepare the filling in advance?

Yes. The spiced potato filling keeps in the fridge for a day, which makes busy-morning parathas quicker. Bring it close to room temperature and check the seasoning before stuffing, as cold filling can taste flatter.

What do you serve with aloo paratha?

The classic accompaniments are plain curd (dahi), a pat of butter, and a tangy pickle (achaar). A cup of hot masala chai alongside makes it the complete North Indian breakfast.
